아일라 서쪽 농장에서 보리 재배부터 병입까지 전 과정을 직접 하는 킬호만의 백 퍼센트 아일라 시리즈는 섬의 풍토를 온전히 담는다. 잔에는 옅은 밀짚빛이 비친다. 엑스 버번 배럴에서 9년을 보낸 2016년 원액은 모닥불 연기와 레몬, 바닐라 향을 또렷이 열고, 농장에서 자란 보리가 향에 신선한 곡물 결을 더한다. 50도의 입안은 그을린 보리와 시트러스, 후추가 단단하게 흐른다. 여운에는 옅은 연기와 곡물의 단맛이 길게 남는다.
