테이스팅 노트
잔을 손안에서 돌리며 코를 가져가면 올로로소 호그스헤드에서 온 체리 시럽과 허브 와인, 볶은 호두의 향이 선명하게 열린다. 한 모금 머금으면 49.5도의 단단한 질감 위로 정향과 에스프레소, 다크 초콜릿의 쌉쌀함과 검은 차가 겹겹이 쌓인다. 시간이 지날수록 미소된장과 말린 버섯 같은 감칠맛이 돌며 깊이를 더한다. 24년을 보낸 이 아란 프리미엄 캐스크를 삼키면 쌉쌀한 허브와 호두, 커피의 온기가 오래 이어진다.

I too feel confident this is a sherry cask, and an excellent one to boot! Indeed, notes of boot polish (no doubt the power of suggestion hard at work there) and cherry cough syrup, herbal wines, Serge's beloved green walnut liqueur, tomato vines and some rather expensive strawberry jam. I find it a very clean and rather sharp, precise sherry style. Quite excellent!
restaurant 맛 (팔레트)
nice arrival, punchy wood spices, cloves, aniseed, freshly made espresso, bitter chocolate, more walnuts - pickled this time - and rather a lot of strong black tea, black pepper and game meats. Getting more leathery with quite a few bitter herbs, ala some long aged Fernet Branca perhaps. Nicely umami as well with quite a bit of miso paste and dried mushrooms. Really excellent drop

good length, long in fact, all on bitter herbs, walnuts and coffee with a dark chocolate once again
