잔을 가볍게 흔들면 오크니 섬에서 자란 하이랜드 파크의 짙은 황금빛이 잔 벽을 타고 느리게 흘러내린다. 코를 잔에 묻으면 호그스헤드가 남긴 헤더 꿀과 말린 오렌지, 옅은 히스 연기가 차례로 솟아오른다. 54.6도의 한 모금을 혀에 올리면 24년 숙성이 쌓은 밀랍과 캐러멜, 은은한 훈연이 균형 있게 입을 채운다. 천천히 삼키면 오크니 특유의 짭조름한 미네랄이 단맛 끝에 깃들며 길게 따라온다.

Quite some peat and pepper, ginger, heavy herbal liqueur, touches of juniper berries, liquorice wood, grapefruits… It’s all very nervous and becomes more and more gingery and sappy.
