오크니 섬의 바람을 머금은 하이랜드 파크 1975가 오래 익은 호박빛으로 잔 속에 잠긴다. 향에는 마른 헤더 꿀과 은은한 피트 연기, 옅은 바다 내음이 겹겹이 배어난다. 22년의 세월이 빚은 원액은 50도가 넘는 도수에도 둥글게 다듬어져, 흑설탕과 오렌지 껍질, 가벼운 훈연이 혀를 감싼다. 1975년 빈티지다운 깊이가 끝에서 그윽한 스모크로 천천히 사그라든다.
