잔을 천천히 돌리면 은은한 황금빛이 잔 안에서 느리게 회전한다. 코를 가져가면 헤더 꿀과 옅은 훈연, 마른 오렌지 껍질이 차례로 피어오른다. 한 모금을 머금으면 59도의 높은 도수가 혀끝을 또렷이 자극하면서 보리 단맛과 가벼운 피트 연기가 균형을 잡는다. 리필 아메리칸 호그스헤드에서 27년을 보낸 하이랜드 파크는 오크니 섬 증류소답게 꿀과 연기를 한 잔에 단단히 엮어낸다. 삼키고 나면 달콤한 훈연이 입안에 오래 맴돈다.

Some flint smoke and these wonderfully resinous flavours of precious hardwoods. Getting slightly jammy with red fruit preserves too. With water: now the peat comes through more clearly and with a very definite peppery edge. Black pepper, natural tar, ointments, vapour rubs, camphor, hessian and more smoked tea and dried herbs
