테이스팅 노트
짙은 호박빛이 잔 속에서 따스하게 일렁인다. 오크니 섬의 하이랜드 파크 1981년 싱글 캐스크답게 코에는 히스 꽃 같은 꿀과 은은한 모닥불 연기, 말린 과일이 그윽하게 솟는다. 55도의 도수를 타고 입에서는 헤더 꿀과 구운 견과, 옅은 훈연향이 균형감 있게 번진다. 섬 특유의 부드러운 피트가 중심을 잡고, 달콤하면서도 스모키한 여운이 길고 우아하게 남는다.

excellent, big attack, very coherent with the nose, starting with peppered dried pears, dried apples, cloves, cinnamon, tannins (not aggressive but big), acacia honey (but where’s the heather?)... Gets more liquoricy and candied with time, with also notes of quinces and bergamot sweets. Really full-bodied – to say the least

long, more peppery, smokier and spicier, as well as more honeyed. An ever-going Highland Park that needs a little time if you want to catch all its various layers in fact. Excellent, in any case
