오크니 섬의 청량한 북쪽 공기와 거센 바닷바람 속에서 39년을 보낸 하이랜드 파크답게 잔에는 깊은 호박빛이 단단히 머문다. 헤더가 깔린 피트의 향이 먼저 코끝에 닿고 마른 무화과의 결이 깔린다. 입에서는 빽빽한 건포도와 가벼운 훈제가 두꺼운 질감으로 흐른다. 57.6도의 도수가 노숙주의 결을 받치고 여운에는 헤더 꿀과 짠 바람이 길게 이어진다.
