1975년 증류액이 병 안에서 다시 오랜 시간을 보낸 끝에 얻은 호박빛이 깊게 머문다. 향은 어느 하나가 앞서지 않고 말린 과일과 찻잎, 부드러운 향신료가 서로를 감싸며 충만함으로 다가온다. 입안에서는 아르마냑에 적신 자두와 훈연, 허브와 훈제육의 기운이 옛 맥캘란다운 두께로 퍼진다. 오렌지와 감초가 그 사이를 잇는다. 여운은 다소 건조하게 조여들지만 마지막에 남는 커피의 향이 그 마름을 보상한다.

bottle ageing did wonders on this one – unless it was already greatly complex back in 1978? It is these bottles that built the legend of Macallan. Especially the complexity is astounding, we’re in great old wine territories. It’s actually not easy to describe because there are many aromas but none is dominant. We rather experience a feeling of fullness here. All right, if you really want to know, I’d say it’s got all dried fruits and teas and soft spices and aromatic herbs. Oops, almost forgot beef stock and chicken soup
