잔을 천천히 돌리면 짙은 마호가니빛이 묵직하게 출렁인다. 코를 가져가면 셰리가 빚은 건포도와 무화과, 오렌지 껍질의 향이 풍성하게 올라온다. 한 모금 입 안에서 굴리면 25년이 응축한 말린 과일과 다크초콜릿, 가벼운 정향이 혀를 휘감는다. 54도의 힘을 천천히 삼키면 가죽과 오크의 깊은 단맛이 입천장을 덮고, 빈 잔에서도 진한 셰리향이 오래 피어오른다.
