맑은 황금빛이 잔 안에서 잔잔하게 흔들린다. 향은 흙내와 호두, 마른 버섯으로 시작해 건포도와 파이프 담배, 살구와 무화과가 층을 이루며 옛 스타일의 깊이를 보여준다. 58.3도의 힘은 밀랍 광택제와 오렌지, 꿀의 단맛으로 옮겨가고 물을 조금 더하면 설타나 건포도가 앞으로 나선다. 호그스헤드에서 서른 해를 보낸 이 1990년 증류액은 마지막에 옅은 소금기와 밀랍의 질감을 남기며 길게 이어지는 여운을 만든다.

we’re close to those old-school Macallans, especially the 30yo blue label, or indeed the 1970 18yo—sheer splendour. Gentle earthiness, walnuts, mushrooms, dried raisins, pipe tobacco, apricots, truffle, dried figs… You see where we’re going, textbook classic style from the great era. With water: rather glorious, on beeswax polish, oranges, honeys and blond tobacco. And let’s not forget our old friends the sultanas
