테이스팅 노트
잔을 기울여 빛에 비추면 셰리 흔적이 거의 없는 볏짚빛이 그대로 드러난다. 코를 가져가면 석회암과 자몽, 인동꽃이 서늘하게 올라오고 구스베리와 스피어민트가 뒤따른다. 물을 몇 방울 떨어뜨려 흔들면 부싯돌과 흑연, 보리 껍질 같은 광물성 냄새가 새로 열린다. 59.3도를 한 모금 머금으면 날카로운 순수함이 혀를 관통하고 삼킨 뒤에는 레몬과 쓴 아몬드, 백묵의 마른 맛이 남는다.

fabulous, old Macallan without any apparent sherriness, how rare is that? It’s mesmerizing, with an incredible complexity that hints at the best of white Burgundy. No, really. Limestone, grapefruits, honeysuckle, gooseberries, fresh butter, lilac, spearmint, more grapefruits… Perhaps more a great Chablis than a Meursault or a Montrachet so far… Let’s see what happens once water’s been added - because it really keeps punching you after all these years. With water: silex! You just cannot beat this. And myriads of tinier aromas, raw wool, barley, ink, old toolbox, coins, putty, plasticine, marzipan, putty (you're repeating yourself, S.), graphite, asphalt, carbon, brake fluid… Oh, and one tiny green apple
