잔을 천천히 돌리면 오렌지빛이 도는 호박색이 벽면을 미끄러진다. 코를 가져가면 땅콩 브리틀과 밀크 초콜릿, 프랄린이 먼저 오고 파이프 담배와 낡은 서재의 냄새가 뒤를 잇는다. 한 모금 머금으면 마멀레이드 같은 셰리 단맛이 퍼지지만 무게는 의외로 가볍고 카페라테와 가죽이 스친다. 삼키면 태운 캐러멜과 퍼지가 짧게 남고 금세 잦아든다. 52년을 보낸 셰리 캐스크치고는 여운이 담백한 편이다.
