잔을 흔들면 기름진 결이 유리 벽에 두껍게 붙는다. 코를 묻으면 오래된 책과 잉크 가죽 담뱃잎이 먼저 오고 그 뒤에야 대추와 무화과 체리 잼이 열린다. 십 분쯤 두면 이끼와 박하가 더해진다. 56.1도의 한 모금은 기름진 질감으로 흐르며 허브 리큐어와 간장 감초 옅은 연기를 차례로 남긴다. 삼킨 뒤에는 소금기와 광물감이 길게 이어진다. 덴마크 브라운슈타인이 고른 1990년 캐스크의 밀도다.

After ten minutes if rather becomes mentholy, in a beautiful way. Humus, moss, mushrooms…
