잔을 코끝으로 가져가면 마른 허브와 캐모마일이 먼저 올라오고 풀을 태운 듯한 옅은 연기가 뒤따른다. 셰리 시즌드 오크를 썼지만 향은 건조하고 절제되어 들꽃 꿀 냄새가 겨우 비칠 정도다. 한 모금 머금으면 향과 달리 크리미하고 달아 가벼운 캐러멜과 아침 식탁의 꿀이 혀를 감싼다. 삼킨 뒤에는 뜻밖의 소금기가 올라와 15년이라는 시간이 만든 마른 골격을 드러낸다.
