잔을 가까이 하면 훈제 생선과 올리브유 노트가 명확하게 드러나며, 곧 재와 젖은 이끼, 레몬 껍질이 따라온다. 시간이 지나면 광물성 뉘앙스가 발전한다. 팰럿은 25년 숙성답게 공격적이지 않고 타르와 호두, 사과 껍질의 쌉쌀함이 소금기와 함께 균형을 잡는다. 피니시는 길고 건조하며 만사니야 셰리를 연상시키는 짠맛이 또렷이 깃들어 있다. 46도로 병입된 이 1984년 캐올 일라는 절제된 구조감이 인상적이다.
