잔을 코 아래로 당기면 훈제한 자몽이라 부를 만한 향이 먼저 튀어나오고 바닷물과 오래된 드라이 화이트와인이 뒤를 잇는다. 찬 재와 생아몬드, 타르 먹인 밧줄의 결도 함께 깔린다. 한 모금 머금으면 둥근 질감 위로 자몽의 물결이 몇 초 뒤에 밀려오고 소금기와 감초, 굴, 요오드가 이어진다. 46도지만 밀도가 있다. 삼킨 뒤에는 감초 나무와 페퍼민트, 올리브유가 겹쳐 짭짤하게 남는다.
