테이스팅 노트
노즈는 리필 올로로소의 흔적이 캠퍼와 타르, 훈연된 올리브유 같은 짙은 방향으로 드러난다. 소금에 절인 레몬과 검은 올리브가 뒤따르고 백단향과 흰 꽃의 허브 뉘앙스가 그 위를 감싼다. 팰럿은 28년 숙성이 만든 기름진 질감이 이 보틀링의 중심이다. 훈제 베이컨과 타르, 낡은 밧줄과 퍼티가 차례로 발전하며 복잡도가 상당하다. 피니시는 길고 그을음과 해안의 약재 뉘앙스가 천천히 사라진다.

you do indeed get the sense there has been some sherry afoot here. Lots of dense, leathery notes of camphor, tar, smoked olive oil, preserved lemons, black olives and a wee dash of seawater. While there’s also these herbal notes in addition and many coastal fragrances like sandalwood, white flowers and gorse. Beautiful!

this is starting to approach the same profile as these early 1980s casks. Only here I feel the sherry has added something deeper and more leathery and fatty. Smoky bacon, tarry notes, ointment, old rope, hessian, camphor, putty and various cured meats. An impressive and captivating level of complexity I would say
