잔을 코끝에 가져가면 밀랍과 기름, 감귤 껍질이 먼저 오고 해초와 굴, 멸치 같은 바다의 냄새가 층층이 따라온다. 30년이 만든 복합성이 젊은 술과는 다른 속도로 열린다. 한 모금 머금으면 소금과 올리브 절임, 레몬이 지나가고 훈제 연어와 랍상소총 차의 결이 뒤를 받친다. 46도로 맞춘 질감은 기름지고 부드럽다. 삼킨 뒤에는 훈제 연어와 레몬이 번갈아 올라오며 여운을 길게 끌고 간다.

There’s maybe a very small kind of chemical touch in the very first drops (Fanta-like), but then it’s a perfect old Caol Ila, still vibrant (as they say – you can’t write tasting notes if you don’t use vibrant from time to time), with some salt, olive brine, lemon, smoked salmon, lapsang souchong and this very particular grassiness that’s to be found in… old Caol Ila. Some kind of cactus?
