잔을 코 아래로 가져가면 굴과 레몬, 다시마, 비에 젖은 모래 냄새가 한 번에 밀려와 아일라 해변을 그대로 옮겨 놓는다. 젖은 천과 잉크 같은 결도 뒤에 깔린다. 한 모금 머금으면 크림 같은 질감 위로 리몬첼로의 단맛과 굴 즙, 소금기가 순하게 이어진다. 46도로 맞춘 덕에 복잡함보다 편안함이 앞선다. 삼킨 뒤에는 짠맛과 시트러스가 중간 길이로 깔끔하게 물러난다.
