테이스팅 노트
잔을 눈높이로 들면 화이트와인처럼 옅은 빛이 흔들린다. 코를 가까이 대면 부싯돌과 분필, 레몬 껍질이 순서대로 스치고 약솜 같은 소독약 냄새가 뒤를 잇는다. 한 모금 머금으면 바닷물에 레몬주를 섞은 듯한 짠 신맛이 퍼지고 훈연이 뒤늦게 거칠게 밀고 올라온다. 삼키고 나면 입술에 소금이 얹힌 듯한 감각이 오래 남는다. 1991년 증류액을 버번 호그스헤드에서 16년 재운 54.8도 보틀링이다.
