노즈에서는 훈제한 자몽이 가장 먼저 두드러지고 바닷물과 오래된 드라이 화이트 와인, 식은 재가 층을 이룬다. 그 위로 신선한 버터와 생아몬드, 타르 밴 밧줄이 얹힌다. 46도의 팰럿은 둥글게 열리다가 몇 초 뒤 자몽의 파도가 밀려든다. 소금물과 감초, 굴과 요오드가 차례로 발전해 전형적이지 않은 개성을 만든다. 피니시는 중간 이상으로 길고 짠맛과 페퍼민트, 올리브유가 남는다.
