잔을 기울여 향을 모은 뒤 코를 대면 흙과 약초 뿌리 같은 기운이 앞장서고 훈제 연어의 기름진 냄새가 따라온다. 연기는 갈탄과 담배 사이 어딘가에서 은은하게 머문다. 한 모금 머금으면 리필 셰리 벗에서 온 두꺼운 질감이 혀를 감싸고 시트론과 소금물의 대비가 또렷하게 갈린다. 물을 조금 더하면 젖은 자갈과 농가 마당의 결이 열린다. 마지막에는 기름진 짠맛이 혀 밑에 오래 고인다.
