잔을 천천히 돌린 뒤 코를 가져가면 서른 해를 보낸 위스키치고는 놀랍도록 젊은 기운이 먼저 인사한다. 게살과 굴, 바닷모래와 잿가루가 이어지고 그 틈으로 파파야와 바나나 같은 이국 과일이 얇게 비친다. 한 모금 머금으면 마른 만사니야나 마데이라를 떠올리게 하는 산화된 결과 포도씨유의 미끈함이 혀를 감싼다. 삼킨 뒤에는 랍상소우총 같은 훈연차와 사과 껍질이 조용히 되돌아온다.

the problem with Caol Ila is that it's an almost eternal spirit; I don't think we've ever tasted one that was truly tired. The downside is that they never really, exactly seem to age, and a thirty-year-old can appear to be fifteen or even ten. That's somewhat the case here, to be honest. Crabs, oysters, beach sand, ashes, pine needles, lemon and green apple, and wait, a few touches of exotic fruits indeed. Papaya and banana. With water: not much more.
