잔을 코끝에 가져가면 아몬드와 고둥, 조개 같은 바다 냄새가 먼저 나오고 곧 석탄 가루와 브레이크 패드 같은 마른 광물감이 따라온다. 물을 더하면 고사리와 이끼, 솔잎 같은 숲 냄새로 방향이 바뀐다. 한 모금 머금으면 산미가 날카롭게 서고 감귤 껍질과 굵은 소금이 혀를 조인다. 리필 호그스헤드에서 15년을 보낸 1991년 원액의 결이 그대로 드러난다. 삼킨 뒤에는 올리브 절임의 짠기가 오래 걸린다.
