테이스팅 노트
볏짚에 가까운 옅은 빛이 잔 안에서 부드럽게 비친다. 1995년 원액을 21년이나 호그스헤드에 두었으니 기름기와 시간이 함께 쌓였다. 향은 버터와 바닐라의 둥근 단맛으로 시작해 모과와 시트론을 거쳐 장뇌와 소독약, 굴과 해초 쪽으로 넘어간다. 입에서는 광물성의 서늘함과 날카로운 레몬, 녹차의 떫음이 훈제 청어와 함께 자리를 나눈다. 긴 여운은 레몬 껍질의 쓴맛으로 기울다 후추의 매운기로 닫힌다.

perfect. I mean, it’s a bit early to have the perfect ones within the flight but 1. They may well all be perfect and 2. I do not control this sort of thing. Great minerality, sharpy lemons, green tea, smoke, kippers… And a pretty fat mouth feel, which works very well here
