잔을 가볍게 흔들면 스카이 섬 토라베이그의 어린 3년산이 잔 벽에 옅은 황금빛을 빠르게 흘려낸다. 코끝에 가져가면 퍼스트필 버번이 길어 올린 바닐라 빈과 그 위에 깔린 청량한 해풍, 갓 자른 풀냄새가 함께 솟아오른다. 한 모금을 머금으면 61.67도의 강한 알코올이 짠 미네랄과 옅은 훈연을 입천장에 밀어 올린다. 삼키면 레몬 껍질과 어린 보리향이 길게 따라오며 스카이 섬 신생 증류소의 야심이 또렷이 깃든다.
