테이스팅 노트
잔에 담긴 빛은 갓 따른 화이트 와인처럼 맑다. 1989년 증류돼 9년을 오크에서 보낸 이 카올일라는 아마인유와 바닷물, 게와 새우, 해초의 향을 교과서처럼 정확하게 내놓는다. 그 위로 박하가 스민 연기가 얇게 깔린다. 입에서는 전나무와 너도밤나무로 훈연한 아카시아 꿀 같은 단맛에 레몬즙과 굴의 짠물, 훈제 연어가 겹친다. 여운은 시원하게 이어지고 훈연된 꿀이 끝에서 다시 돌아온다.

soft and rounded for a Caol Ila, but how we do enjoy those extra 3%! It’s like acacia honey smoked over fir and beechwood, to which one might have added a splash of lemon juice, a touch of oyster brine and bits of smoked salmon (with beechwood again, naturally)
