잔을 돌려 향을 열면 젖은 돌과 젖은 양모, 굴 냄새가 군더더기 없이 곧게 올라온다. 요오드와 갓 깐 호두가 뒤를 받치는데 그 이상 늘어놓지 않는 단순함이 오히려 미덕이다. 한 모금 머금으면 후추를 뿌린 굴 같은 짠맛과 감초가 앞서고, 23년 숙성이 남긴 퍼지와 카페라테가 뒤에서 슬며시 비친다. 삼킨 뒤에는 짠맛이 더 짙어지며 대추야자 같은 단맛이 끝에 걸린다.
