잔을 크게 흔들면 63.6도라는 숫자가 무색하게 향이 가볍게 떠오른다. 코를 가져가면 갓 자른 풀과 생버터, 사과주스가 먼저 오고 마른 건초가 뒤를 받친다. 한 모금 머금으면 피트는 앞이 아니라 뒤에 앉아 있고 바다 공기와 옅은 캐러멜이 혀 가운데를 지난다. 물을 몇 방울 더해 다시 삼키면 곡물의 결이 더 또렷해진다. 1981년 호그스헤드에서 27년을 보낸 카른 모르의 이 보틀링은 삼킨 뒤 마른 오크와 에일 같은 쌉쌀함으로 닫힌다.

Over infused herbal tea, burnt bread… It doesn’t get any better with water. 71 points . Caol Ila 12 yo (60.2%, James MacArthur, early 1990’s) spirity and even pungent. Almost undrinkable – let’s add some water… It gets a bit better – just a bit. Still very grassy and bitter. Let’s stop the pain right now. No interest whatsoever, just spirit. 69 points .
