테이스팅 노트
잔을 가볍게 흔들면 옅은 볏짚빛이 잔벽을 타고 흐른다. 코끝에 가져가면 네덜란드 클레이 증류소다운 풋풋한 보리와 바닐라, 흰 꽃의 산뜻한 향이 올라온다. 한 모금을 머금으면 아메리칸 오크가 들인 가벼운 꿀과 시트러스가 혀 위를 미끄러진다. 혀 가운데서는 풋사과와 통후추의 알싸함이 솟는다. 3년 숙성다운 생기 넘치는 곡물 단맛을 삼키면 후추 같은 알싸함과 오크가 짧고 또렷하게 따라온다.

the distillate isn't big (Holstein or similar?) but the oak did indeed add some texture and some fine notes of lemon curd, cloves and caraway. Sweet curry, turmeric, cinnamon. With water: hey this one swims well! Water adds a few lovely citrusy touches, then we have coffee, fennel seeds, cloves, cinnamon, nutmeg and ginger. The oak is taking over at this point, but this remains 'not an oak-bomb'. Phew
