백포도주빛이 잔 안에서 투명하게 흔들린다. 처음에는 미네랄이 앞서 다소 무뚝뚝하지만 잠시 기다리면 해초와 요오드, 타르에 절인 훈제 청어가 차례로 올라온다. 물이 닿으면 젖은 양모의 눅눅한 기운까지 비친다. 입에서는 뜻밖에 레몬 리큐어와 마멀레이드의 단맛이 먼저 흐르고 소금과 훈제 연어가 낮게 그 뒤를 받친다. 55.6도의 여운은 중간보다 길며 감귤의 산뜻함으로 정리된다.
