잔을 코끝으로 가져가면 30년이라는 나이가 무색할 만큼 생기 있는 레몬과 갓 만든 버터, 아몬드가 올라온다. 잔을 흔들면 모닥불 같은 풋내 섞인 연기와 기침 시럽, 오트밀 죽의 고소함이 겹친다. 한 모금 머금으면 레몬과 재, 사과 껍질과 소금기가 팽팽하게 당기고 삼킬수록 시트러스가 더 또렷해진다. 버번 혼스헤드에서 1981년부터 보낸 시간이 타르 같은 끝맛을 길게 남긴다.
