연한 짚빛이 잔 안에서 흔들린다. 1991년 증류액은 뜨겁고 달아 사과 조림 같은 향이 먼저 다가온다. 시간이 지나면 오래된 장미와 다시마, 생굴의 냄새가 이탄 연기와 겹친다. 56.1도의 입은 설탕에 절인 오렌지와 금귤로 달다가 곧 소금과 후추로 돌아선다. 뒤에 깔린 감초와 겨자의 매콤함이 두께를 만든다. 여운은 짭짤하고 힘 있게 오래 남는다.
