테이스팅 노트
잔을 오래 돌린 뒤 코를 넣으면 신선한 버터와 바닐라 꼬투리가 먼저 열리고 곧 금속을 닦은 듯한 서늘한 냄새가 스친다. 더 맡으면 훈제 생선과 바닷내, 백묵 같은 결이 이어진다. 한 모금을 머금으면 크리미하고 과실 향이 크게 터지며 호밀 같은 매콤함이 뒤따른다. 물을 더하면 고수와 소금, 후추를 얹은 과실 리큐어처럼 정돈된다. 30년을 호그스헤드에서 보낸 1979년 증류액이다.
