같은 1979년 원액이지만 29년을 채우고 2006년에 병입된 이 보틀링은 시간이 두 해 더 얹힌 만큼 향이 한층 눅어 있다. 옅은 황금빛 아래로 사과 식초와 드라이한 리슬링의 산미가 먼저 열리고, 어부의 배와 먹지, 헤시안 천의 냄새가 그 뒤를 두껍게 받친다. 입에서는 46도의 도수가 짠 감초와 견과의 고소함을 고르게 펼치고 아티초크 같은 쌉쌀함이 균형을 잡는다. 여운은 길고 훈제 연어와 레몬의 인상이 남는다.

whiffs of apple vinegar and bone dry riesling, I like this. We’re really approaching the style of the old pre-extension Caol Ilas, with this very specific smoky/tarry fruitiness that’s so entrancing. Old garage, oils, fisherman’s boat, carbon paper, tarry ropes, hessian, fish oil… I’m sure you see what I mean. Also overripe apples, barley water, a little clay… Perfect!

some punch! You would have thought it was going to be a little lazy, but not at all. A lot of liquorice, both salted and sweet, perfect walnuts and almonds, some whelks (I’m sorry, whelks - wait…), a wonderful lemony herbalness, a welcome bitterness after that (artichokes?) and a fast growing feeling of ‘eating the ashtray’. The winning trio mint and camphor and eucalyptus is there too
