잔을 코끝에 가져가면 신선한 버터와 바닐라 꼬투리가 먼저 인사하고 곧 금속을 닦은 듯한 냄새가 스친다. 잔을 더 흔들면 훈제 청어와 바닷내, 백묵 가루 같은 결이 차례로 드러난다. 한 모금을 머금으면 크리미하면서도 과실 향이 폭발하듯 퍼지고 호밀을 떠올리게 하는 매콤함이 스친다. 물을 더하면 강한 과실 리큐어에 고수와 소금, 후추를 얹은 맛으로 정리된다. 29년을 보낸 1979년 증류액이다.
