잔을 코끝에 가져가면 아마인유와 바닷물 냄새가 먼저 인사하고 게와 새우 그리고 해초가 뒤를 잇는다. 멘톨 같은 서늘한 연기가 그 위를 감싼다. 한 모금을 머금으면 1975년 증류 원액이 스물세 해를 거치며 얻은 아카시아 꿀이 전나무 연기와 함께 번지고 레몬즙과 굴 소금물이 산뜻하게 갈라놓는다. 43도라는 낮은 도수에도 삼킨 뒤 훈연한 꿀이 다시 돌아온다.

soft and rounded for a Caol Ila, but how we do enjoy those extra 3%! It’s like acacia honey smoked over fir and beechwood, to which one might have added a splash of lemon juice, a touch of oyster brine and bits of smoked salmon (with beechwood again, naturally)
