잔을 코 아래에서 천천히 돌리면 40도라는 도수가 무색하게 묵직한 연기가 올라온다. 낡은 석유 난로와 흑연, 숯불, 유목을 태운 해변의 모닥불 냄새가 차례로 스치고 베르가못의 향긋함이 그 사이를 비집는다. 한 모금을 머금으면 베이컨 같은 기름기와 약재 냄새, 유자와 소나무 수액이 이어지며 짠맛이 서서히 자란다. 1972년 증류액답게 삼킨 뒤에도 아일라의 윤곽이 또렷하다.

here too we are surprised by the depth and lack of weakness in this old malt which will have nonetheless spent nearly forty years in a simple screw-cap bottle. The same fattiness (bacon), the smoky and medicinal side, bergamots and yuzu, a bit of pine sap, then a growing salinity... One could come to prefer these lower degrees to the full proof and other cask strengths. You are right, let's not exaggerate
