잔을 흔들어 향을 깨우면 훈연한 자몽이 가장 먼저 코를 두드리고 뒤이어 바닷물과 식은 재, 마른 화이트 와인의 냄새가 겹친다. 옅은 골드빛을 확인하고 한 모금을 머금으면 소금물과 감초, 굴의 요오드가 둥글게 뭉쳐 혀를 감싼다. 삼키는 순간 짠맛이 오히려 더 진해지며 레몬과 페퍼민트가 길게 따라붙는다. 21년을 채운 퍼스트 캐스크 보틀링답게 끝맛에 올리브유의 기름기가 스친다.
