잔을 흔들어 향을 올리면 볶은 땅콩과 마스틱, 스키 왁스 같은 뜻밖의 냄새가 먼저 인사한다. 코를 더 넣으면 작게 절인 레몬과 아몬드 밀크가 이어지고 이탄은 기름지게만 남아 앞으로 나서지 않는다. 한 모금을 머금으면 쓴 아몬드와 바닷물, 풋고추와 다크초콜릿이 차례로 혀를 지나간다. 삼키면 감초 나무와 용담의 뿌리 맛이 흙내처럼 깔리고 짠 기운이 마지막까지 붙는다.
