잔을 코앞으로 가져가면 요란하지 않지만 지극히 맑은 연기가 곧게 올라온다. 젖은 돌과 마른 양모, 굴과 요오드가 차례로 지나가고 갓 깐 호두가 그 끝을 맺는다. 한 모금을 머금으면 후추를 뿌린 굴 같은 짠맛이 먼저 서고 감초와 퍼지, 카페라테의 단맛이 뒤에서 조용히 받친다. 삼킨 다음에는 스물다섯 해를 지난 액이 대추야자 같은 단내를 남기며 짭짤하게 사라진다.
