옅은 황금빛이 잔 속에 맑게 어린다. 아일라 카올 일라가 1983년에 증류해 30년을 묵힌 이 위스키는 카올 일라답게 향에서 그을린 장작과 바다 내음, 옅은 레몬이 어우러져 올라온다. 54.7도의 입안에서는 훈제 소금과 마른 시트러스, 가벼운 후추가 두꺼운 질감으로 흐르며 긴 숙성이 피트의 거친 결을 우아하게 다듬는다. 균형이 단단해 흐트러짐이 없다. 여운은 잿빛 스모크와 광물 같은 짠맛이 길게 사그라든다.

this is different. There’s some toasted oak, there is some coffee, there’s some charcoal, and there’s a very distant and almost elusive Caol-Ila-ness, which comes unexpected from the owners. What I also get, mostly, is a wonderful artisan cider, like they make in the best parts of Normandy. And old cigars (advance warning, that’s always a good sign). With water: it’s smoked cider of the highest order. I find it intriguing that Diageo’s First Nose(s) would have come up with such a profile

sweet Vishnu! This is implacable, sharp, acrid, oaky in a good way, mercurochromy spirit from Islay. Much bigger, powerful, and almost aggressive than expected. I even find it a little dangerous. With water: oh lovely. Smoother, gentler, civilised. Smoke and rosehips, I’d say
