테이스팅 노트
잔을 코끝에 가져가면 오래된 자동차의 잘 닦은 가죽 시트 같은 왁스 향이 먼저 인사한다. 잔을 흔들수록 무른 사과와 조개, 아주 옅어진 이탄이 차례로 따라온다. 50도를 한 모금 머금으면 꿀과 밀랍이 둥글게 감싸고 시트론 리큐어 같은 산미가 그 사이를 가른다. 1984년 증류해 26년을 보낸 만큼 훈연은 뒤로 물러나 소금기와 재의 형태로만 남는다. 삼키고 나면 밀랍이 마지막에 한 번 더 떠오른다.
