밀짚빛 술을 잔에서 몇 번 돌리면 비 갠 초원 같은 서늘한 기운이 먼저 피어오른다. 코를 가져가면 신선한 버터와 옅은 연기가 우롱차, 시가의 기미와 어우러진다. 한 모금을 머금으면 파라핀 같은 왁스질이 혀를 감싸고 풋레몬과 날 선 허브가 그 위를 가른다. 물을 조금 더하면 나무껍질과 호두 속껍질이 나오며 술이 거칠게 반격한다. 1995년 증류해 19년을 보낸 이 위스키는 삼킨 뒤에도 풀내와 좋은 녹차의 쓴맛이 길게 이어진다.

it’s the subtleness that’s impressive, many others are great but a little monodimensional. Not this one, and I especially like these touches of paraffin. Crunching a candle. Then green lemon and sharp herbs. Bites you a bit – ah, a fight, finally! With water: becomes wild! Grassy, bitterish, chlorophilly, green, tense… It fights back!
