향미 프로필
테이스팅 노트
밀짚빛이 잔 안에서 맑고 얕게 흔들린다. 1995년 증류액이 열여섯 해를 보낸 뒤 내놓는 향은 비 온 뒤의 초원처럼 청신하고 신선한 버터와 여린 훈연이 녹차의 결과 겹쳐 있다. 입에서는 파라핀을 씹는 듯한 질감이 인상적이고 초록 레몬과 날선 허브가 뒤이어 혀를 물어뜯는다. 53.1도의 힘은 물을 만나면 오히려 사나워진다. 여운은 길고 풀내가 짙어 쉽게 놓아 주지 않는다.

it’s perhaps the freshest today, we even find notes of a meadow after the rain, certainly quite some fresh butter, and a rather delicate smoke that combines well with some green tea (wulong – Taiwanese – oh forget) and just an ‘idea’ of cigars. With water: bark and roots, walnut skins… it’s becoming grassy, in the noblest sense of the word

it’s the subtleness that’s impressive, many others are great but a little monodimensional. Not this one, and I especially like these touches of paraffin. Crunching a candle. Then green lemon and sharp herbs. Bites you a bit – ah, a fight, finally! With water: becomes wild! Grassy, bitterish, chlorophilly, green, tense… It fights back!
