아주 옅은 화이트와인빛이 잔 속에 담긴다. 향은 표현이 크지 않은 대신 섬세해 얇은 초콜릿의 쌉쌀함이 훈연 사이로 스민다. 물을 더하면 농가보다 해안 쪽으로 기울어 해초와 젖은 돌이 또렷해진다. 60.5도의 술은 높은 도수에도 단맛이 조금 더 살아 있어 혀 위에서 둥글게 퍼지고, 레몬과 소금이 뒤를 받친다. 1995년에 증류해 버번 호그스헤드에서 자란 이 위스키의 여운은 마른 잿내로 닫힌다.
