스페이 강 곁 카론에 있던 임페리얼은 이제 사라진 증류소로, 그 스피릿은 점점 귀해지고 있다. 1995년 증류해 호그스헤드에서 20년을 보낸 이 시그나토리 언칠필터드는 잔에 옅은 황금빛을 띠고, 향에서는 잘 익은 사과와 바닐라, 마른 풀이 부드럽게 올라온다. 입에서는 꿀과 시트러스, 가벼운 오크 향신료가 매끄럽게 번지며 56.3도가 또렷한 힘을 보탠다. 여운에는 보리 단맛과 흰 후추가 깔끔하게 남는다.

what a distillate! Totally and plainly orchardy, with a solid background made out of beeswax and sunflower oil. Perfect maltiness. Mirabelle jam, crystallised quinces, overripe apples, hazelnuts… All is perfect in here. With water: gets farmyardy. Indeed, cities get boring, we all need simpler lives

Perhaps a pinhead of mustard, which I already found in earlier Imperials. With water: swims like an athlete from the ex-USSR. More lemon, also kiwis, orange blossom honey, grapefruits…
