잔을 흔들면 배럴 21년 숙성의 옅은 금빛이 잔 벽을 천천히 적신다. 잔을 코끝에 가져가면 닫힌 임피리얼 증류소 1997년의 잘 익은 청사과와 바닐라 콩이 가장 먼저 인사한다. 한 모금을 머금으면 50.5도의 둥근 보디가 흰 꿀과 마른 헤이즐넛을 입천장에 펼친다. 삼킨 뒤를 따라가면 엘릭서 디스틸러스의 더 싱글 몰츠 시리즈답게 깨끗한 곡물 단맛이 또렷이 깃들어 있다.

very good, very interesting, pretty unusual. As always, you can’t tell if there’s something from the cask’s previous content, in this case plain and pure peat, but what’s sure is that it’s much smokier than your average ex-refill Speysider. And more lemony. Rather feels like an excellent blended malt, there, I said it. Unless they used to do very small peated batches at Imperial? With water: well, not so sure anymore.
