밀짚 같은 옅은 금빛이 잔에 얕게 깔린다. 1991년 증류해 버번 캐스크에서 16년을 보낸 디 올드 십야드는 사과 껍질과 램프 기름, 아마인유가 얽힌 두꺼운 유질의 향을 낸다. 파라핀과 생아몬드, 잉크의 뉘앙스 뒤로 연기가 스며 있다. 입에서는 사과즙과 레몬즙의 산미가 후추와 훈제 굴, 청어의 짠맛을 만난다. 57.4도의 여운은 길고 왁스처럼 매끄러우며 풀잎의 쌉쌀함이 끝까지 남는다.
