this sister cask is much less fruity but woodier and grassier, the oak having been more active. More vanilla, ginger and plain sawdust and a faint sourness (yoghurt). The most austere of the three. With water: even more austere and grassy. Chives, mint, lawn, a little dill
restaurant 맛 (팔레트)
ah yes, now it’s my favourite, very old Highlands style, with that great fruits/minerals combo that’s hard to describe. Resinous honey, lemon marmalade, cough drops, pepper… And it’s all really big. With water: more of the same, but big time. Probably a little less complex and ‘entertaining’ than cask #951 but maybe even more satisfying for its great compactness
